Since I can not tolerate any type of grains, I have tried making a lot of different types of bread, and this one is our absolute favorite!
So if you want to cut down on wheat, or just want to try a healthy bread - try out this fabulous recipe!
100g (3.5oz) Flax seed
100g (3.5oz) Shreeded coconut or 50g coconut flour
100g (3.5oz) Pumpkin seeds
200g (7oz) Carrot pulp from homemade carrot juice or 100g (3.5oz) almonds
6 tbsp Red palm oil or coconut oil
Small amount of sea salt or Himalaya salt
1 tsp Baking soda
2 tbsp Apple cider vinegar
Preheat the oven to 150C or 300F.
All ingredients except apple cider vinegar is placed in a food processor and mixed until the mass is even. (You can also just mix in a bowl if whole nuts are not used.)
Add in Apple cider vinegar and mix well.
Form the bread buns on a flat oven rack covered with parchment paper. They can be a bit sticky, but do your best to make them round.
Bake in the middle of the oven at for 35-40 minutes.
If you do not have a juicer you can always exchange the juice pulp with 150g (3.5oz) ground almonds!
All seeds can be changed to what ever seeds and nuts you have in your cupboard! My bread buns are never the same. Try sesame seeds, chia seeds, cashew nuts, almonds, sunflower seeds and so on! There are so many possibilities!
This is the best gluten free and dairy free bread I have ever tasted! And they are even 100% without grains.
This can be very beneficial in our daily life, maybe you have a job interview or any type of situation where you feel little nervous. Try it, stand up straight, lift your head high and put your arms on the sides of your hips, stand like that for 2 minutes and see what happens.
I know that it can feel fake and uncomfortable to stand with power when you really feel small and want to hide, but I promise you that if you really do try it, it works! You will feel less stressed, more confident and even happier. As Amy says - "Fake it til you become it!"

I have had a lot of fear and negative thinking related to start blogging, and I have been postponing it for months! It has become a physical pain in my stomach every time I thought about it. It was something that I should do, but I was too afraid to do anything about!
Some of the thoughts that kept going through my head where:
What should I write about?
What is important?
What would people think?
Can I really write blog posts?
What is relevant and what do people want to hear about!
But especially what should my first blog post be about?!?!
I wanted it to be perfect, not only perfect but the best post ever! I wanted the world to see how professional I am, and really impress everyone!
But the truth is, we are all humans, and we all, including me, have these negative thoughts also called Mind Monsters! When we look at what is really important in life, all these Mind Monsters are not worth a second of our time!
This is my journey of life and I need to be true to myself. It is not really important if you like my posts or not! You can always choose not to read it if you don't like it! :) What is important is that I express the true me, and thereby accept myself as I am!
I am a unique person, we all are, and by accepting ourselves and others just the way we are, our life will be so much more fun and enjoyable!
"This fear is only in my head - and I am the only thinker in my mind!" Therefore I will post this as my first post, and just start my journey of becoming a blogger!
